Fancy, Simple, Mango Dessert

Yesterday it was my boyfriend's dad's birthday, and we didn't know what to get him. We decided to make him something from a recipe, and we knew he loves mangoes so we tried to find something on the internet. There weren't many mango desserts that were quick and easy to make, and also good looking. So we dropped into our supermarket and found a pamphlet on mangoes and *luckily* on the back there was a picture of some sort of mango and yoghurt dessert in a glass! It looked really good so we decided to make it! Considering there aren't a lot of mango recipes out there like the ones we were looking for, I'll show you the steps below:

Recipe makes: 2 large wine glasses full of the dessert.
Overall Time: 20-30 mins, very easy!

You Will Need:

1. Four mangoes (we used Calypso)

2. Greek Yoghurt (Mango flavoured) about 500 grams



3. Passionfruit Pulp in Syrup



4. 2 Large wine glasses

5. Glad wrap/plastic wrap

6. Spoons & knives!


STEP ONE:

Cut your mangoes using a large knife around the pip, so that you get two halves off of each mango.
Then use (preferrably) a smaller knife to cut criss-crossed lines into each half, making what looks like a checkerboard.



STEP TWO:

Use your hands to turn the mango halves inside out, making the squares pop outwards.



STEP THREE:

Use a small knife to slice the squares off the mango skin, putting all squares of mango into a bowl.





STEP FOUR:

Start adding the ingredients to the wine glasses.
Firt add a spoonfull of mango squares to the bottom.
Then drizzle some passionfruit pulp onto the mangoes, trying to get some of the seeds next to the glass, so that they are visible from the outside (purely for good presentation). You could also use passionfruit pulp straight from the actual fruit but I find it's a bit time consuming and costly.



On top of this, spoon some greek yoghurt forming a relatively thick layer.



STEP FIVE:

Repeat STEP FOUR until the glass is basically full.

STEP SIX:

I like to finish it off with a layer of mangos and passionfruit pulp, and then a smaller dollop of yoghurt in the middle of the mangoes. I then drizzle some more passionfruit over the yoghurt and mangoes, ensuring some seeds are seen on the top of the yoghurt for presentation.



STEP SEVEN:

Be sure to cover the top of your wine glass with glad/plastic wrap and keep in the fridge in a SECURE place, or you will run the risk of the glass falling out and smashing (yes this happened to me).

You have completed your dessert, repeat all steps to make the second wine glass full. You should have used up most of your yoghurt and all of your mangoes, depending on the size of your wine glasses of course. You can save the rest of the puassionfruit pulp for a pavlova or fruit salad.
